Homemade Chicken Pot Pie

Ingredients

Needed to prepare the pot pie are:

  • 1 package of frozen all-ready pie crusts (2 crusts)
  • 1 chicken breast
  • 1 and 1/2 cups frozen mixed vegetables
  • 1 can (10 and 3/4 oz.) of cream of potato soup
  • 1/3 cup of milk
  • salt and pepper to taste

How to Assemble

Putting together the pot pie is quick and easy. Here is how.

  1. Pre-heat oven to 375 degrees.
  2. Set out pie crusts to thaw.
  3. Cut the chicken into bite-sized pieces and brown on the stove top in a skillet.
  4. Steam vegetables and drain.
  5. Mix together the chicken, vegetables, cream of potato soup, and milk.
  6. Salt and pepper to taste.
  7. Pour into one pie crust.
  8. Top with second pie crust and crimp the edges.
  9. Cut a small slit in the center of the top crust.
  10. Place in oven and bake for 45 - 50 minutes.

Make a Meal

Serve the chicken pot pie with a lettuce salad topped with fresh sliced vegetables such as cucumbers, radishes, carrots and mushrooms. Add a fresh fruit salad made of dices apples, pears, bananas and grapes for a meal that includes all of your food groups. Alternative Pot Pie Ideas

Other great pot pie combinations include substituting the meat and soup. The pot pie may also be made with tuna and cream of mushroom soup. Turkey in place of chicken. Cubed beef and cream of potato soup are also a tasty combination. Pork and cream of celery soup provides the same quality nutrition but with a different twist. This meal can also be made as a vegan dish. Prepare with only vegetables - add diced zucchini, asparagus, sweet potatoes, and squash and mix with a creamy white sauce.

Also, instead of using a creamed soup, you may also try boiling and mashing potatoes or sweet potatoes as the sauce to stir in the rest of the meat and vegetables. This will give the same creamy texture, but become more nutrient dense.
